The enamelw...Jon, thank you for your kind comments. The enamelware we used worked very well. The biggest headache (not too surprisingly) is definitely the smoke/soot outer cleanup. I am thinking about trying an enamel coated roaster next time to speed up the process but I'm worried that the enamel might not do well on an open fire.
